Short Description:
As a Head Chef you will be responsible for the preparation of all dishes on the menu.
Full Description:
Reporting to the Catering Manager, you will ensure that wholesome, nutritious and well presented meals are provided to clients in detention.
Your principal duties would include :
- Provide Clients with a menu made available on a four week cycle which is sensitive to their needs.
- To maintain an exceptionally high standard of food production service and food hygiene.
- To be conversant with craft skills, menu knowledge, presentation and display of foods and portion sizes and be able to assist in the training and development of the detainees working in the Catering Department.
- To maintain the preparation and work area in a clean and hygienic condition at all times and the thorough cleaning of these areas, including equipment after each service.
- You will act as a representative of the Centre management team
Ideally you will have:
- Certificate III Hospitality (Kitchen Operations)
- Familiarity with HACCP practices Intermediate Basic Food Hygiene
- Advanced Food and Hygiene Certificate
- Minimum of two years experience in large scale catering environment.
Additional Requirements:
- Maintain a current Australian Federal Police Clearance
- Maintain a current -Working with Children" certificate in accordance with the relevant state child protection legislation (as required)
- Meet the character and training requirements of the Migration Act 1958 in order to be designated as an Officer under the Act
